Every year I make and decorate three Christmas cakes.
One for us, one for my parents and one for my in laws.
The decoration is always simple.
This year I used some woven flax strip around the base of the cake and
a pohutukawa (NZ Christmas tree) bead, wire and paua shell decoration on top.
For the cake I use a recipe I found in
New Zealand House and Garden magazine about 8 years ago.

I'm not usually a fan of fruit cake,
but for this one I mix the fruit myself and it is always a nice moist cake.
I quite like it.
I ice it with a layer of almond icing under a layer of traditional white icing,
before adding my simple decorations.

ReplyDeleteWhen I was little, my parents made a square Christmas cake. My brother and I would fight over the corner bits... Lots of icing, not much cake! These days I enjoy the whole thing, but back then I was definitely an icing and cake girl!
It is really too hot to cook anything here at the moment! I love your cake though, the decorations are so beautiful and so beautifully represent the best of New Zealand craft.

ReplyDeleteI used to make a cake but that was years ago. Usually we have a less traditional cake for hubby's birthday on Christmas day. ..which I must think about! Haha

ReplyDeleteYup - I usually make my own - my grandmother's recipe (a gingerbeer soaked version, I've seen it in old cookbooks). This year my auntie made one for us because I've been so busy. Your decoration is inspired - I'm not an adept at the whole marzipan/fondant thing - mine cakes get a pattern of whole almonds on the top. Yours sure does look pretty though. Maybe I'll try it next year?
