White Chocolate Rocky Road

 
This is my version of White Chocolate Rocky Road:

2 x 250g packets white chocolate melts*
2 x 190g packets of raspberry lollies (less a few that got eaten first)*
1 x 250g packet of marshmallows*
100g roasted almonds
1/4 cup coconut threads, plus a little extra
 
Line a tin with baking paper (I used an 18cm x 27cm tin).
Place all the ingredients except the chocolate in a bowl.
Carefully melt the white chocolate in a glass bowl in the microwave.
Pour the melted chocolate into the bowl with the other ingredients.
Mix well.
Spread into prepared tin and lightly sprinkle with extra coconut threads.
Refrigerate for a few hours until set.
Cut into bite sized pieces.
 
 
Delicious.
* I used Cadbury's Real White Chocolate Extra Smooth and Creamy Melts,
Allen's Ripe Raspberries lollies, and Woolworth's Homebrand marshmallows.

  1. I make this recipe too! and adapt it as you have. It's delicious and so easy to make for simple Christmas gifts for friends...yummm!!! A few pieces never make it to friends though ;).

  2. ohh white chocolate rocky road is SO dangerous, that looks really lovely. I have a recipe from an old Family Circle recipe that you add broken up Arnotts scotch fingers into the mix and sometimes I throw in some pistachios for some Christmas color too. I am avoiding making it this year though.
